I wanted to post this rather simple sandwich algorithm since the upcoming thanksgiving weekend will see many a fancy dish being made. It’s not all glamorous vegetables, and dazzling desserts, sometimes you need to make a meal fast to fill your belly and fuel your mind. Anand often grabs a package of cheap-o noodles adds spices and some frozen veggies, but that doesn’t appeal to me much. Instead I’ll often make a quick sandwich… and if I happen to have some of Yves excellent veggie sausages on hand all the better.
It’s pretty darn simple, add some vegenaise (vegan mayo) and dijon mustard to some toasted bread, fry up the sausage cutting it in half lengthwise. Slice up some tomato, dill pickle, and onion. I like to add a liberal amount of raw unsalted sunflower seeds on top of the mayo before construction, Jen is probably rolling her eyes since I tend to find excuses to add seeds and nuts to most things, but trust me they belong there and not just because I’m biased. Construct the rest of the sandwich and add some sprouts if you have any on hand. It took 15 minutes to make and it tasted great, plus it gave me the needed energy to go grocery shopping for the weekend, I came back with 30 pounds of stuff so the energy was appreciated :)
