In what’s quickly becoming a traditional festive activity I decided to stuff a vegetable for thanksgiving dinner, Anand stuffed some peppers last year, and again this year actually. The recipe was taken from La Dolce Vegan since the book is just jammed with amazing recipes, and because my copy of Vegan with a Vengeance is on loan at the moment.
In any event the recipe is fairly straightforward and the most difficult part is cutting the damned squash, which would probably be made easier with adequate knives. Basically you cut the squash in half lengthwise and pop the halves in the oven until soft, scoop them out and add the flesh to some sauteed onions, garlic, pepper, celery, with some spices etc… Then stuff the scooped out shells and bake for about 25min at 350F.
It was delicious stuff!! Not as easy as Anand’s peppers (which I plan on posting a complete recipe for soon) but well suited to a special occasion centered on starchy food.

Now that looks really good! I might try this one.
