I was in a serious broccoli mood today, and after being disappointed with the recipes I found I took it upon myself to make something delicious…. I was both amazed and satisfied when it worked.
2 broccoli florets (with all those cute little heads removed and the huge stalks discarded)
1 medium zucchini (sliced in half centimeter rounds)
1 inch ginger (about 2 Tbsp. chopped)
3 cloves of garlic (chopped coarsely)
1 tsp. red pepper flakes
1 Tbsp. veggie oil
1/2 c. water
whole wheat pasta for two
1 Tbsp. flax oil
1 Tbsp. tamari
Put salted water to boil in a medium pot, when it starts to boil add the pasta, cook until on the soft side of al dente. Concurrently heat the veggie oil in a large frying pan to medium-high, add the ginger, garlic, and red pepper flakes and saute for about a minute. Add the broccoli and zucchini and mix, then add the water and cover the pan to help steam the veggies. Cook for about 10 minutes, or until the veggies are cooked, stirring every couple of minutes to make sure all the zucchini is getting a chance to fry on the pan. When the noodles are ready drain the water and throw them back in the pot, add the flax oil and the tamari and stir well.
Serve half the veggies over half of the noodles…. enjoy :)
This was very very tasty!! I want to eat the whole thing myself… whoa! And it’s so very easy.
