Flat fried food was the order of business this weekend, I made the chickpea cutlets from Vegenomnicon (as did Jen so some dual post of cutlet comparison awaits) and I made these zucchini patties from vegweb. The recipe is simple and involves chopped onion, mushrooms and grated zucchini. You basically mix those things and some spices together with bread crumbs and a little flour… I’m not sure how but the combination of those things makes a loose substance that sticks together. I’m convinced they should fall apart and somehow my will power and hunger held them together. I suggest baking them and then frying them in a bit of oil to make them crispy on the outside, just frying falls far short of cooking the zucchini.
You don’t know this yet but that’s the same pairing I used for the cutlets…. I don’t have an excuse, except that I’m lazy :) It was very tasty and full of fiber and carbs… I guess I could have added some nuts to the patties to get some protein action going on… but who bothers to think about these things anyway?
