This soup is among the pre-releases of Veganomicon and is posted at the post punk kitchen, if you have yet to try it get on the freak’n band wagon! I made it with soba noodles the first time, this time I had some tasty kamut spaghetti noodles but any type of noodle will work just as well.
I added broccoli, since I was in a broccoli mood, which I guess happens often. I also added celery, because if you’re going to call for celery seeds you might as well have the stalk in there… plus I wanted to make a larger than called for batch and needed to fill it out with some more veggies. I used a white miso which is a bit mild and tastes great with this soup! I love it, it makes me happy and even though I’m full to the brim I want to run back to the pot and eat the rest!

Sweet! I have a giant tub of miso sitting in my fridge, and though it makes a very good avocado-miso-lime dip, I was at a bit of a loss as to what to do once I ran out of avocados. I will definately be trying this one. Hopefully it is as delicious as you say and I can add it to my list of 3 recipes I know how to make.
It really is tasty, and it’s remarkably healthy too :) Do share the details of this miso dip, I’m not comfortable with miso yet and the idea of adding it to guacamole scares me.
Oh, it’s really easy. I found it online somewhere (can’t remember where) so I can’t claim to have come up with it myself. Basically, 1 avocado, 1 lime (peeled), 1tsp (or 2 if you’re adventurous) of miso, a bit of water to help it mix, and a clove of garlic if you like (I suppose other spices might work too but I haven’t tried them). Then you toss it in the blender, chop up a ton of veggies and invite people over to eat it. Or eat it yourself. I’d imagine it’d be tasty on flatbread too, with some other topping to cut the acidity a bit.

What is interesting? What don’t you agree with? You don’t like the soup… too much miso, not enough broccoli? I would be inclined to think this is not a real comment (i.e. some kind of bot or the like) but if so it doesn’t seem to be accomplishing anything… I mean it’s not selling a product or giving a link to a website, etc…
