I found some panini bread at the grocery store, it’s white bread but I couldn’t resist the idea of eating little pizzas with the beer I had just picked up (Granville Island Maple Cream Ale… it’s very good stuff!). I topped them with mushrooms, tomatoes, red onion, green bell pepper, garlic, hot peppers, and of course some tomato sauce that had some spices in it… basil and oregano I think. Here it is before spending 20 minutes in the oven at 350 Fahrenheit.
I added the hot peppers on top before slipping it in. I hadn’t done the panini bread pizza before and I was really happy with how the bread crisps up when cooked. I’ll definitely do pizza this way again, I would prefer some more healthful bread though. The end result was delicious and paired exceedingly well with my beer and a 3-2 victory for the Canuks over the Ducks.
While I was preparing the pizza I was listening to Colleen Patrick-Goudreau’s podcast, ‘Food for Thought: Inspiring a Joyful, Sustainable, Compassionate Diet’. It is a wonderful podcast for several reasons, not the least of which is Colleen…. look at her:

she’s adorable! Her calm yet unyielding demeanor is inspiring, she talks about veg*nism: nutritional info, ideology, real life situations, etc… The format is very approachable each episode is about ten minutes, so go listen to one now.

I have just made the switch to being vegan and I stumbled upon this website. I have made this choice for health and moral reason so I truly believe in my heart and and soul that this is for the better. The only problem being that I have never in my entire life been a particularly imaginitive chef. I basically go to the supermarket, usually Maxi because I am on a budget, and I buy frozen good and put it in the freezer and then heat up. I currently working and I am very exhausted when I get home so I just want to read Plato and listen to some Fine Young Cannibals. I really enjoy their music very much but I wonder about their name. I have gotten rid of all my leather clothing and accesories so I wonder if I should take it a step further perhaps? Or is “Cannibals” just an ironic play on the meat obsession of mankind?? Ok, forget that for a little bit, I look through my cd collection and I see lots of offenders. Bruce wearing beaten up leather coat leaning on Clarence wearing large leather pants the only innocents being the guitar and sax. oh and Mike Ness in leathers all the time why? Why does Meat Loaf have to call himself that? Biggest offenders be the Ramones, four tough guys in leather coats very offensive to my new found vegan ideals. I’m glad they took a righteous stand on End of Century and took the coats off. Perhaps it was that great humanitarian and gentle soul, Phil Spector who convinced them to shed the meat coats. Anyway I think it will be the only record of their’s I will keep in my collection. Perhaps I shall just listen to Meat is Murder by The Smiths over and over. Anyway what I was saying about my cooking habits before I got sidetracked was that I am very hungry for some new recipes so thanks a million.

Thanks for commenting, I’m glad our recipes and food creations have been an inspiration for you. If you like the easy meal one thing I would suggest is to cook up a storm on the weekend and freeze a bunch of meals, but them in individual Tutperware containers, then when you want a meal you can just grab one and microwave :)
There are probably vegan frozen things you can get, and there are lots of convenience foods, like vegan sausages and burgers. So you can always make sure to have some of them on hand in case you’re in a rush, or not in the mood to cook. It’s best to use these things sparingly since they are highly processed and more expensive.
As for the music, I think you’re being a little too neurotic. Lots of musicians eat meat and exploit animals in lots of ways, and not listing to their music isn’t a consumer choice that challenges their ethical position on animal rights. If you follow the logic you’ve outlined you will quickly realize that suicide is your only option… and we would be down one reader… so don’t do that.

Ok I did not know I was being neurotic about music because it took me a couple days to realize the connection to veganism and my leather clothes and accessories. Deep down inside I wasn’t really wanting to throw out my cds, espcially Ramones and Stones because I like my guitar licks meaty.
Cannot wait until the weekend. I will cut down on regular alcohol intake so I will be in tip top shape for cooking.
