I made this recipe ages ago and forgot about it until now but I have such a pretty picture of it I had to post… I also have some kind of reputation for making a lot of no-bake desserts. I was really afraid that this pie was just going to turn into mush and not be able to be cut into slices, but somehow it turned out okay! Adding agar to it would make it even better I think. The crust is the best part and it has that really healthy “raw” taste to it (but not in a bad way), so if you want a pie you don’t feel bad eating for breakfast here it is…

-1 1/4 cups raw sliced almonds
-1 cup raw sunflower seeds
-2 cups medjool dates, pitted
-1/2 cup banana chips
-1 tsp. ground cinnamon
-1 tsp. ground cardamom
-2 cups blueberries
-2 mangoes, diced
-3/4 cup sliced strawberries
-1 Tb. ginger, grated
Finely chop the almonds and sunflower seeds in a food processor, then add the dates, banana chips, 1/2 tsp cinnamon and 1/2 tsp cardamom and process until ingredients are finely ground and the mixture comes together. Press into a pie plate and refrigerate for half an hour. Meanwhile, puree the fruit, ginger and the other half tsp of the spices in the food processor. Pour filling into pie shell and chill until the filling sets, at least an hour.
