Props to Christine for this recipe, I had nothing to do with these except for eating them. But if it weren’t for me this recipe never would have been veganized, so… there.

It’s loosely based on this recipe but she changed a lot so here is the new and improved version:
Bars
1/2 cup shortening
2/3 cup brown sugar
1/2 cup soy milk
1 tsp vanilla
1 egg replacer (probably not necessary)
1 1/2 cups flour
1/2 tsp baking powder
pinch of salt
2 1/2 bananas, mashed
Preheat oven to 350, grease and flour a 9×13 inch pan. Cream together the shortening, brown sugar, and soy milk. Then mix in the vanilla and egg replacer. Sift in the dry ingredients, add the mashed banana and walnuts and mix well. Pour into pan and bake for about 20 minutes. Allow to cool before glazing and cutting into bars.
Glaze
1/2 banana, mashed
~1 Tb soy milk
1/2-1 tsp vanilla
icing sugar
Mix together the banana, milk and vanilla (used a blender to get the banana very liquidy). Then mix in icing sugar until it reaches the desired thickness (fairly runny but thick enough to spread).
Byebye banana bread, this is my new favourite thing to do with overripe bananas!

Walnuts? There be no walnuts in your recipe.
Whoops! Add as many chopped walnuts as you desire. Alternatively, 1/2 a cup.
