This is another delicious recipe from Breena Burton’s Eat Drink and be Vegan. These cookies are extremely easy to make and taste so good, especially dunked into a cup of hot coffee… yum! The peanut butter is mixed into the batter so that there are large chunks and swirls of it. I love this idea since I often find the peanut butter flavor gets too dilute when it’s mixed all through a batter, this way there are easily identifiable blasts of peanut butter goodness.
These wheat free, they use barely flour instead of wheat. Lots of Dreena’s recipes are wheat-free which I like, not because I can’t eat wheat, or even know someone who can’t… but it’s nice to be aware of these things in case I have to cater to someones needs… plus I get to experiment with different flours, which is fun.
