I’ve been pretty busy the past couple of weeks, and I’ve needed to make some quick meals. This is one of my favourites, it’s healthy, extremely filling, very tasty and takes at most half an hour to make.
1 broccoli stalk
1 carrot
1 roma tomato
1 clove garlic
1/2 c. couscous
1 tsp. sesame oil
1 Tbsp. flax oil
1 Tbsp. Braggs (or tamari)
1/2 Tbsp. hot sauce
1/2 Tbsp. nutritional yeast (optional)
Start by chopping up the broccoli and carrot and setting them to steam. Add 1/2 cup water to a pot and put it on high heat, when it starts to boil add the sesame oil, swirling the water so it becomes ‘mixed’, then add the couscous and take it off the heat. Chop up the tomato into small chunks and mince the garlic, throw these on top of the couscous, there’s no good reason for that… it’s just convenient… after 5 minutes stir the tomato and garlic into the couscous.
To prepare the sauce add the flax oil, braggs, hot sauce and nutritional yeast to a small bowl and mix together well. When the broccoli is cooked, plate the couscous add the veggies on top and pour the sauce on top…. it might look something like this:


Two things I should have mentioned.
Firstly you should slice the carrot into rounds that are reasonably thin, maybe half a centimeter. Despite what some people may think the carrots will cook in the same amount of time as the broccoli :) I didn’t have any carrots the day I made the dish pictured above so they’re missing from the photos, but I almost always include them.
Secondly the 1/2 Tbsp of hot sauce is what I use because I like spicy food, I don’t find that it’s even remotely hot but you might want to hold off a bit and only use 1/2 – 1 tsp.
That sounds, and looks, simple yet delicious! I will certainly have to try that. Should work well to take to work as well, I imagine. For some strange reason I’ve rarely ever cooked couscous. Yum!
