Jen and I are having a delicious thanksgiving all by ourselves this year. We’ve enjoyed a romantic day of cleaning the house, doing dishes and cooking various tasty foods :) Although the day was largely an exercise in domestic co-habitation, we made a huge and delicious dinner, which is being digested slowly with sparkling wine and the T.V. premiere of the first Futurama movie.
The spread included mashed potatoes with chickpea gravy (vegan with a vengeance), corn bread (joy of vegan baking), baked tofu and herbs (la dolce vegan), roasted brussels sprouts and steamed broccoli. We had a pumpkin pie for dessert with So Good caramel ripple ice cream.
The recipe for the pie is in the Joy of Vegan Baking, and it was super satisfying. I especially liked the roasted pecans on top… also the crust had pecans in it… yummmy!


Damn that looks good. My only complaint is that that pie needs more pecans ;)
